Searing is a method used in cooking. Whether it is grilling, braising or roasting, searing is about building a sturdy flavour with meat and fish is the most favourable choice of all time. And what flavour is better when that piece of meat lands on a scorching hot pan, and the surface instantly starts caramelizing until a crust forms. The end result is a deep, savoury flavour that anyone would easily go head over heels on, and makes you want to lick your plates clean. Meanwhile, here's how to do it with the best pan-seared fish in Kuala Lumpur.

Chili Espresso
Certified
halalThere’s a lot of flavours bursting through for this one. Beautifully fresh pan-seared dory fish that lightly crisp on the outside and soft on the inside. Perfectly seared you could say. The dory fish is rested on a bed of potato salad that goes oh so right with it. Tomato salsa and freshly mixed greens with citrus dressing are presented nicely for a smooth zesty added flavour. Definitely a crowd pleaser for this dish.

Chez Leoniel
One of the signature dishes at Chez Leoniel is their Pain – Poȇlé d’esturgeon. A pan-fried sturgeon, a kind of fish that produces caviar (also available here), served with French beans and broccoli imported from France, baby carrots, and oven-dried beetroot. The fish is only 75% cooked which allow diners to taste the natural fish fat, all creamy and smooth texture. The imported vegetables are slightly different compared to local ones which shows that Chez Leoniel only use the best. Drizzled over the dish is a creamy sauce that’s a little sour but complements the fish and vegetables greatly.
