Once upon a time, traditional gui ling gao (Chinese herbal jelly) recipe used to be made from a boiled tortoise or turtle shell. As cruel as it sounds, thankfully that isn’t the case anymore. Today, gui ling gao is produced using different herbal concoctions simmered for hours until it becomes a jelly-like texture. Gui ling gao can be served hot or cold, and each serving usually comes with honey or sugar syrup. Why? Because gui ling gao tastes like a bitter Chinese medicine if you don’t add a drizzle of syrup for sweetening purposes.
