Like most ramen joint, the key to a good ramen is 3 things. The consistency and springiness of noodles, depth of flavour of broth and fresh additional ingredients such as char siew or broiled egg. Ichiban Ramen
Ichiban Ramen, unlike the rest of the nominees, is a Japanese restaurant dedicated towards serving ramen. Though they also offer a small amount of other Japanese dishes such as don-sets and tempuras but ultimately, ramen it is. Ichiban’s style of ramen is quite different as well. Instead of using heavy, intense flavoured tonkotsu broth (pork bone), they opt for a lighter chicken-based soup. Hence, most of what they offer are pretty mild as compared to some other ramen joints.More info
