Unlike other paellas, they use risotto rice, an Italian short-grain rice that is starchy to help build the creaminess desired in the dish. Mixed with their prawn, squid, and mussels, this dish would just melt with goodness in your mouth! Even though they are an Italian restaurant, they certainly do this dish justice!
