WOP - Wood-fired Oven Pizza Shah Alam

I believe everyone should try this once in their lifetime especially if you are situated here in Malaysia. The opportunity of being able to try out real Italian food without having to fly overseas is amazing. First off let me introduce to you this one amazing family that I have met. They are the owners of WOP and the most humble and knowledgeable people I have met. They first started off selling Wood Oven Pizza right out their house with their own handmade oven which they named Mark and have gone around places to sell their pizza with their mobile oven, driving around town towing their oven behind and the current oven they are using in their restaurant is called Mark 6. 

The specialty of this pizza shop is that they sell Neapolitan Inspires Pizza. They follow the Italian pizza making recipe from using Italian flour to making their own mozzarella cheese. Fun facts, Neapolitan pizzas are generally pretty small about 10-12 inches and are cooked at high temperatures 400-500 degrees for no more than 90 seconds. WOP uses rubber wood and mangrove wood to start up the fire for their oven and starting up usually takes longer than making the pizza so they will start firing up the oven an hour before operation hours. If you think those burnt spots are not to be eaten then you are wrong because Wood-fired pizza signature marks are those blistered chared spots that appears when the dough is well rested and oven is hot. Since they don't use regular flour and uses Italian flour instead, the long cold fermentation making of their pizza dough is truly exception as it will turn out crispy and flaky yet fluffy and soft, satisfying to eat. WOP chose to follow Neapolitan pizza because it is simple and authentic and that is how pizzas should be made. 

To try out original Italian pizzeria, get your hands on the Marinara and Magherita pizza which is also their signature pizzas. You can have the choice of having it topped with fresh mozzarella which is their handmade mozzarella which is healthier. 

You wouldn't want to miss out on such friendly people and authentic Italian slices as they keep it all original.
